Later edition of Pellaprat’s “bible de la cuisine,” with 3500 recipes, richly illustrated with 197 pages of color plates showing final results and 48 pages of black-and-white photographs illustrating cooking techniques.

After working in some of the finest restaurants in Paris in the late 19th century, Pellaprat went on to teach at the prestigious Parisian culinary institute Le Cordon Bleu for 40 years. In addition to recipes covering everything from appetizers to desserts, Pellaprat’s comprehensive guide to all things culinary includes a dictionary of terms, a chapter on table settings, 50 sample menus, and a brief chapter on “La couscous des Arabes,” new to this edition. With preface by Curnonsky, “Prince Élu des Gastronomes.” First published in 1936. Text in French. Pencil owner signature on title page.
