Second edition, later issue of this cookbook by one of the great 19th century chefs of Europe, "with 378 drawings carved on wood, an engraved frontispiece, and two copper-plate."

Urbain Dubois was one of the best known chefs of the 19th century who "wrote six important works on cookery," including this work. He ran the palace kitchen of the King and Queen of Prussia, and is "credited with introducing the custom of having servants wait table" (Feret, 42). First published in 1868 and in English in 1870; the second edition in English was first published in 1872. Bitting 132.
